Thumbprint Cookies

Kids will love to "lend a hand" when you make these rich and buttery cookies. If you're really ambitious, you can even make a delicious strawberry jam to use with this recipe.

Ingredients:

1 stick (4 ounces) butter, softened to room temperature
1/3 cup sugar
1 egg yolk
1 teaspoon vanilla extract
1 1/3 cups flour
1/3 cup jam, jelly or marmalade
1/3 cup slivered blanched almonds

Instructions:

Preheat the oven to 350 degrees F. Lightly grease a baking sheet.

In a large bowl, cream the butter until smooth and light. Add the sugar and beat until light and fluffy, then beat in the egg yolk and vanilla. Gradually add the flour and mix until completely incorporated. The dough should be very firm.

Shape the dough into 1-inch balls and place them on the prepared baking sheet, leaving 2 inches of space between them.

With your thumb, make a deep indentation in the center of each cookie. Bake for 7-9 minutes, or until firm.

Remove the baking sheet from the oven and fill the center of each cookie with about 1/2 teaspoon of jam, then sprinkle the jam with the slivered almonds.

Return the cookies to the oven and bake for 6-8 minutes longer, or until they are light golden brown around the edges.

Let the cookies cool on the baking sheet for 2-3 minutes, then transfer them to a rack to cool. Makes about 2 dozen cookies.
