Basic Cupcake Recipe
Ingredients
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1 cup (2 sticks) butter or margarine, softened
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 cup milk
- 1 package (12-oz.) mini chocolate chips, divided
Directions
Preheat oven to 375°
- In a separate bowl, beat sugar, butter and vanilla until creamy
- Add eggs one at a time, beating after each addition
- Beat in the flour mixture alternating with the milk
- Add 3/4 cup chocolate chips and stir by hand.
- Spoon into 24 greased and paper-lined muffin cups. Fill 3/4 full.
Bake for 18-20 minutes. Cool slightly in pans on wire racks, then remove to wire racks to completely cool. Frost and sprinkle with remaining morsels.
Basic Frosting Recipe
Ingredients:
- 2 1/2 cups sifted powdered sugar
- 1/2 cup butter or margarine, softened
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Beat powdered sugar, butter, milk, vanilla extract until creamy.
- Add 1 cup melted chocolate chips for flavor, optional
Decorating tips: It's really very easy to decorate cupcakes, and kids will have a ball just frosting them.
Use sprinkles, tinted coconut, colored sugars and gels as decoration. Pipe on a message, or shape decorations from colored marzipan. Imagination really rules here!
We used tinted coconut (a few drops of food coloring added to the coconut-then shake in a plastic bag for coverage) and some jelly beans to create "easter egg nests."
Be sure to store your cupcakes in a tightly covered container so they do not harden or go stale. That is, if they last that long!
